We're on a total apple kick here in our Bodacious household. 'Tis the season for everything apple and pumpkin. Not too long ago, I shared a recipe for Caramel Apple Cupcakes. Last Friday, we had a few people over for dinner. I made a big kettle of corn chowder with apple cider bacon and herbs, homemade french bread, and these delicious Apple Cinnamon Cheesecake Cookies.
Normally, when I make cookies with fruit in 'em, I use dried fruit. This time around, I experimented by using fresh diced apples. I wasn't sure how the cookies would turn out, but you know what? It worked! I definitely prefer using the fresh apples over the dried version.
These Apple Cinnamon Cheesecake Cookies are also pup friendly. Our fur-kids enjoyed a nibble or two. Coco, who is our pickiest eater and doesn't care for apples, enjoyed the cookies as well.
