Got An Abundance Of Zucchini? Shred! Shred! Shred!

For the past 4 years, we have successfully had a Porch of Produce. In the spring, we plant peppers, tomatoes, cucumbers and summer squash in containers...on our porch. Between that, Farmers Markets, and our generous neighbors sharing the bounty of their summer gardens, we've had an abundance of fresh summer produce. We enjoy it. Our fur-kids enjoy it. At the end of the summer season, we always have extra zucchini and tomatoes.

The tomatoes, I prep and freeze for fall and winter soups. The zucchini, I shred. And shred. And shred. I keep some out to make fresh loaves of zucchini bread and freeze the rest for future loaves of zucchini breads and soups.

The zucchini bread freezes very well.

The homemade zucchini bread recipe I have, and use to this day, was handed down to me over 2 decades ago from a family friend. I've tried several others over the years, but this one is my absolute favorite. We love it. I serve it up for breakfast or as a snack. And, it's pup friendly so we can share it with the kids. They love it too.
